1 cup old-fashioned rolled oats ( I used Trader Joe’s Quick-Cooking Steel Cut Oats)
1 tsp. ground cinnamon
1/4 tsp. sea salt
1 cup unsweetened applesauce
1/4 cup semisweet chocolate chips
1/4 cup peanuts, chopped (the recipe called for toasted pecans, which I didn’t have, so I improvised)
Preheat oven to 350 degrees. Lightly coat baking sheet with nonstick cooking spray. Combine oats, cinnamon and salt in a bowl- mix well. Add applesauce, chocolate chips and nuts- mix well. Drop heaping spoonfuls onto prepared baking sheet. Bake for ~15 minutes (with my oven it was closer to 20 minutes). Allow the cookies to cool, and enjoy!
