21 Day Fix dessert: Oatmeal Cookies with chocolate chips and peanuts

Ingredients:

1 cup old-fashioned rolled oats ( I used Trader Joe’s Quick-Cooking Steel Cut Oats)
1 tsp. ground cinnamon
1/4 tsp. sea salt
1 cup unsweetened applesauce
1/4 cup semisweet chocolate chips
1/4 cup peanuts, chopped (the recipe called for toasted pecans, which I didn’t have, so I improvised)

Instructions:

Preheat oven to 350 degrees. Lightly coat baking sheet with nonstick cooking spray. Combine oats, cinnamon and salt in a bowl- mix well. Add applesauce, chocolate chips and nuts- mix well. Drop heaping spoonfuls onto prepared baking sheet. Bake for ~15 minutes (with my oven it was closer to 20 minutes). Allow the cookies to cool, and enjoy!

    • Hi Lisa!
Thanks! I’m glad you like the recipe- have you had a chance to make them yet?
When I made them I doubled the batch and I’m pretty sure I got about 20 cookies, so it would be ~10 cookies for a single batch.
I just used a spoon to scoop out the batter and drop them onto the cookie sheet.
Thanks for stopping by my website :)

  1. This recipe sounds delicious! How many are per serving? And what type of container would this count as? Thanks!

    • Hi Laura!
I believe when I made it, I doubled the recipe and got around 18-20 cookies. 2 cookies counts for 1 yellow container. Thanks for stopping by my website :)

  2. Each cookie is supposed to be about a tablespoon. The regular recipe (not doubled) should make 16 cookies. Two comes per serving counts as one yellow box.
